This feature was eliminated in newer chips to make way for more accounting information asked for by the Nevada gaming commission. Some people like running older game chips like the 731 - as you can change the pay out ding-ding-ding sound for one of seven different songs. Ie chips 1271 vs 1274 - again the chip has to be faster and the 16mhz chip won't work in a 10mhz board and vice versa. The game chip is different because it has the extra controls for the sound but functionally its the same other than the sound controls. The faster chips also work on the 10mhz boards - original faster chips are hard to come by in the wild and most people simply burn their own.

The reel chips (reel number) you use on a 16mhz board is the same as a 10mhz board but the chip has to be physically faster than the ones for the 10mhz board. The 16mhz do not have the blue volume knob on the side.
